Floral waters, also known as hydrosols, are a by-product from the steam distillation of essential oils.

The hydrosols retain the water-soluble constituents of the plant whilst the essential oils contain the oil-soluble parts. This means that hydrosols can often smell quite different to their essential oil counterpart. This is particularly noticeable with Lavender Floral Water which, although still pleasant, has a more earthy, herbaceous scent which can be an acquired taste for some.
