Buckwheat Pancakes - The Tasty Alternative
Who says you cannot enjoy a tasty pancake and keep the pounds at bay? Well most nutritionists actually, but just because most pancakes are fried and contain sinful fillings, doesn’t mean all pancakes are bad.
In fact I have discovered a delicious pancake recipe which can help to lower your cholesterol, improve your metabolism and eliminate fat– buckwheat pancakes.
Okay, I admit it… it doesn’t sound like the most appetising pancake around, but buckwheat pancakes come with an array of health perks:
- Enriched in inosit, buckwheat can adjust your metabolism, fat and lipo-soluble vitamins
- Contains essential amino acids that your body cannot naturally synthesise
- Decreases cholesterol by eliminating fat
- Due to its high magnesium concentration, buckwheat has been found to relax blood vessels, improve circulation and decrease blood pressure
- Due to it high number of vitamin B, buckwheat is recommended in cases of liver disorder and diabetes
So how do I make them?
They are not that different from your traditional pancake:
Ingredients:
- 1 Cup buckwheat flour
- 1/2tsp Salt
- 2tsp Baking powder
- 2 Eggs (beaten)
- 1 Cup whole wheat flour
- 1tbsp Brown sugar
- 1tbsp oil or melted butter
- 2 Cups 100% milk
Instructions:
- Using a pan, brush the base with oil and heat over a medium flame until hot.
- Next sift your flour and stir in your other dry ingredients into a bowl
- Stir in your milk, eggs and oil, give a quick mix, then pour some of your batter onto the pan. NOTE: buckwheat pancakes generally take longer to cook than traditional pancakes, so wait until small bubbles are appearing all over the surface before you try to turn it over (I recommend using a spatula to do this).
- Wait until the other side is lightly golden and then serve.
Alternatively, if you don’t fancy creating a batter from scratch you can try using Orgran’s Gluten Free Buckwheat Pancake mix. Not only does it contain the same health benefits of traditional buckwheat, this mix is completely gluten-free and prepared so all you have to do is add milk – perfect.
What about fillings?
For me, fillings are always the calorie killer when it comes to making pancakes as I love smothering mine in chocolate spread or sugar. Neither of which are good for your waist. But don’t fear. I have found some healthy pancake fillings which you can use instead:
- Chopped/mashed banana
- Stewed fruit or berries
- Low fat yoghurt
- Pineapple, mango and passion fruit
