Vegan & gluten-free Shepherds Pie Recipe

Follow our easy recipe that makes a perfect shepherd's pie for a hearty meal or autumnal dinner party.
What you’ll need:
- 600g white potatoes
- 600g Sweet potatoes
- 40g vegan butter
- 3 tbsp olive oil
- 1 onion
- 2 carrots
- 3 cloves garlic
- 2 sticks celery
- 1 tbsp coriander seeds-crushed
- 1 tbsp fresh thyme - chopped
- 350g dried mushrooms-soaked for 2 hrs then drained
- 12 sun-dried tomatoes-chopped
- 2 tbsp balsamic vinegar
- 100ml vegan Stock
- 1 tin lentils
- 1 tin chickpeas
- 1 sprig of. chopped rosemary
- 5 sprigs of parsley - chopped
- zest of 1 lemon
- 30g brown rice breadcrumbs
Method:
- Pre-heat oven to 200° C /gas 6
- Chop all potatoes + place into a large pan of water cook until tender the drain + add vegan butter, salt & pepper mash it all together + set aside.
- Dry-roast the coriander seeds then add a splash of oil.
- Add thyme, onion, garlic + carrots.
- Cook on low heat until soft tender.
- Add mushrooms + Sundried tomatoes, balsamic vinegar + more oil and cook for another 10 mins.
- Stir in stock, lentils, chickpeas + all their juice - turn up heat + allow to bubble for 10 mins to thicken the sauce.
- Add parsley to the mix + season, transfer into a large oven dish.
- Spread the mash on top and rough up the surface to create texture.
- finally, mix oil, garlic, lemon zest herbs + breadcrumbs in a bowl.
- Sprinkle it over the mash + place the pie into a hot oven for 10-15 mins or until piping hot + with a golden- brown crust on top.
