Heather honey has a very distinctive flavour of heather and is

exceptionally aromatic, which results from its many essential oils in the

nectar and pollen of heather flowers. In a liquid form it has an rubin-

amber colour and a bit jelly-like consistency which is quite unusual for

honey. After crystallisation it becomes orange, sometimes dark brown

and has a fine-grained consistency.
