The slender black grains known as wild rice are not technically rice, but an aquatic cereal grass native to North America.A sacred food of the indigenous American Indians, it was traditionally collected by hand from the lakes.
Wild rice takes around 45 minutes to cook, but needs only simple boiling in water or stock until the grains burst to reveal their starchy white interior.
